Bachelor Mother


Well, I may not be a bachelor, but I sure know how to eat like one. Just keep these ingredients in your pantry, and you too can whip up a tasty meal in minutes!

egg noodles; I like the No Yolks brand
olive oil
sliced olives (green or black; you decide)
sun-dried tomatoes
canned artichoke hearts, quartered
tin of anchovies
tin of smoked oysters
grated or crumbled cheese of your choice

I purchase the last two from Trader Joe’s because I like their particular products, but you can find your own brand if there’s no TJ’s near you. Smoked trout works surprisingly well, too. All of these seafood items come packed in oil, so I usually pluck out the fish first and then reserve the oil if needed later.

Just put your water on to boil, and when it’s ready for the pasta, start tossing the ingredients into a heated pan in the order described. If you are cooking for one person, as I was tonight, you won’t need a full can/jar/tin of anything. Use each ingredient in quantities you prefer.

The main thing is to keep the items on hand for those nights when you just need to whip up something quick, easy, and tasty. You can also add something green if you keep frozen peas in stock.

When the pasta is cooked, drain it, and if your sauteed ingredients seem dry, you can add a little of the reserved oyster/trout oil to the pasta and toss with salt. Then dump your pan-cooked ingredients over the pasta, toss with cheese, and dust with pepper.
